Egg Mayo on Good Steroids
Egg mayo sandwiches are so freaking good. And better yet, super simple to make. You either love or hate it. Here in the Bouwer household, it is a favourite.
One of our favourite grocery stores sells egg mayo sandwiches. Being the huge egg fan that I am, I highly recommended it to my husband when we were stocking up on road-trip snacks. He was not convinced. After having a taste of my sandwich and ending up eating half of it, he finally understood my obsession.
How about combining all the favourites- egg, avocado and bacon, in one dish? This filling/topping is super duper delicious! You can make this a day in advance.
It is a perfect lunch option to make on meat-free Monday – just leave out the bacon. It would also work as a topping for bruschetta appetisers to serve at your next dinner party. Make it Banting-friendly by using Banting-friendly mayonnaise and use the crispy bacon as the ‘vessel’ or serving it on or with cucumber slices.

Ingredients
- 1 Ripe Avocado
- 3 Eggs
- 2 Tablespoons Mayonnaise
- 1 Tablespoon Plain Yogurt
- 1 Teaspoon Wholegrain Mustard
- 1 Teaspoon Lemon Juice
- 1 Tablespoon Chopped Chives / Chopped Salad Onions
- 1 Tablespoons Chopped Fresh Parsley
- Salt & Pepper to taste
- Small French Baguette
- Bacon (I prefer streaky)
Instructions
- Preheat the oven to 200°C.
- Cut the French baguette lengthwise in half and toast in the oven. Turn around once the top is slightly crispy.
- Remove from the oven and let is slightly cool down.
- Cook the bacon in the hot oven until crispy.
- Hard-boil the eggs and remove from the shells.
- Cut the eggs into smaller pieces and add it to a medium mixing bowl.
- By using a fork, mash the egg into even smaller pieces.
- Add the avocado to the egg and mash into a paste-like texture.
- Add the rest of the ingredients to the avo and egg mixture and combine.
- Spread the mixture generously onto the toasted baguettes, top with bacon and serve.
